Lentil Mushroom Stew

Ingredients
  

Lentil Mushroom Stew

  • cups Steamed Lentils from Trader Joes (* if you want to use dry lentils, note that 1 cup dry yields 2½ cooked)
  • 2 cups Sliced Cremini Mushrooms (or a mix of cremini, white, and portobello)
  • 1 cup Chopped Shallot (approximately 3 small shallots)
  • 1 cup Cubed Carrots (approximately 3 small carrots)
  • ½ cup Diced Celery
  • 1 tbsp Minced Garlic
  • ¼ cup Coconut Aminos (can substitute with soy sauce)
  • 3 cups Vegetable Broth
  • 2 tbsps Tomato Paste
  • Water

Mashed Potatoes

  • 1 lb Yellow Potatoes
  • 2 tbsp Vegan Butter
  • ¼ tsp Salt (only if using dry lentils)
  • ¼ cup Vegetable Milk (i prefer oat milk)

Instructions
 

  • Chop, slice and mince all vegetables.
  • Rinse potatoes thoroughly. Skin if desired (I prefer to leave skin on for texture).
  • In a large, deep frying pan, sauté shallots and garlic in a few tsps of water over medium heat, for about 5 minutes or until golden.
  • Add mushrooms and coconut aminos and increase heat to medium-high. Sauté for 5 more minutes, stirring frequently. 
  • Add vegetable broth, carrots, celery thyme and oregano (add lentils now ONLY if using pre-soaked, DRY lentils- DO NOT add Trader Joe's Steamed Lentils at this point) and bring to a low boil over medium-high heat. Once boiling, reduce heat to a simmer and cook on low for about 20-25 minutes.
  • While the stew is simmering, add potatoes to a large pot and cover with water so they are just submerged. Bring to a boil on high heat and cook for 12-15 minutes or until they can be easily poked with a fork.
  • Drain potatoes and add back to pot or a mixing bowl. Add salt, vegan butter and vegetable milk and mash until tender and fluffy.
  • Add Trader Joe's steamed lentils and tomato paste to the stew and let simmer for a few more minutes.

Notes

If using dry lentils I recommend pre-soaking!
